- 1 cup Almonds
- 1/2 cup Dates or Rice Malt Syrup
- 1/2 cup Raw Cacao Powder
- 1-2 tablespoons Coconut Oil
- 1 teaspoon Peppermint Essence (or a few drops of essential oils)
- Pinch of salt
- 1/2 cup Shredded Coconut (to coat)
- Blend almonds and processor
- Add all ingredients in a bowl and mix well.
- Roll into balls.
- Roll through shredded coconut to coat.
- Place in fridge to set. They are also delicious from the freezer.
